Damper
Ingredients: 4 cups flour
½ tsp. Baking Soda
1 1/3 cups water
Mix flour and baking soda together. Add water and mix until soft dough. Put into greased pan and allow to rise for 15 minutes. Put into pre-heated 375 degree oven for 20 to 25 minutes until crust is golden and has a hollow sound when tapped. Serve with hot tea.
Scones
Ingredients: 2 cups self rising flour
2 tsps. Sugar
½ tbl. Butter
1 cup milk
Combine flour, sugar, and butter together. Add milk to make sticky, soft dough. Put dough on lightly floured board and knead until smooth. Roll dough out to about a ½ inch thickness. Cut into circles and put on greased baking dish. Brush the tops with milk. Bake in pre-heated oven at 375 degrees for 12 to 15 minutes. Serve with jam and hot tea.
Meat Pies
Ingredients: 1 lb. diced chuck
½ finely diced onion
2 Tbls. flour
¾ Tbl. fresh ground pepper
½ to ¾ cup of water
¼ cup red wine
12 ounces of puff pastry or regular pie pastry
1 beaten egg to glaze
Directions
1. Trim fat from steak, cut into thin shreds, then chop very finely. Dust with flour, salt and pepper and place in the top of a double boiler.
2. Place enough boiling water and wine to come halfway up. Simmer for 2 hours or until the meat is very tender. Replace water in saucepan.
3. Allow to cool completely.
4. Roll out pastry dough thin and cut 3/4 of it to fit individual pie tins. Line tins with dough, and fill about 3/4 full with meat filling. Cut lids from remaining dough, dampen edges and put into place.
5. Cut a vent in the top of each pie for steam to escape. Chill for 15 minutes, and then brush with beaten egg. Bake in a preheated hot oven (400 F) for 25 minutes or until pastry is puffed and golden. Serve with ketchup if desired. Makes 4 to 5 servings
Pavlova
Ingredients: 6 egg whites
Pinch of salt
8 ounces super fine sugar
2 Teaspoons of corn starch
½ Teaspoon of vanilla
1 Teaspoon of white vinegar
Mix the salt with the egg whites and beat until stiff. Fold in the sugar, vinegar, and vanilla. Finally fold in corn starch. Into lightly greased Bundt pan pour mixture. Put into pre-heated 250 degree oven and bake for 1 ½ hours. Turn off oven and leave Pavlova in oven until cool. Top with whipped cream and fruit, such as strawberries, blueberries, or peaches.
