Crawfish Boil

Ingredients:        4 pounds of crawfish

                             2 green bell peppers cut in halves

                             2 onions peeled

                             3 lemons cut in quarters

                             3 stalks of celery cut in halves

                             Salt and pepper to taste

Boil 3 gallons of water.  Put in the lemons, green peppers, celery, onions, and salt and pepper.  Return to boil and drop in live crawfish.  Boil for 15 minutes and immediately take them out of water and serve.  Serves 4.

Red Beans and Rice

Ingredients:        4 cups of dried red beans, soaked overnight

                             1 pound of ham

                             1 chopped carrot

                             2 Bay leaves

                             1 medium onion, chopped

                             Salt and pepper to taste

Boil the beans for at least 2 hours with the ham and vegetables and seasonings.  When tender, serve over white boiled rice.
