St. Augustine Recipes
Empanadas
Ingredients for pastry: 2 cups flour
Pinch of salt
1 beaten egg
½ cup shortening
Cold water – enough to make firm dough
1 Teaspoon vinegar
Mix flour, salt, and shortening until consistency of a course meal. Add egg, water, and vinegar to make a firm dough. Chill about 1 hour.
Ingredients for filling: 1 pound ground pork
1 pound ground beef
1 finely chopped onion
1 finely chopped garlic clove
¼ teaspoon ground cloves
2 Tablespoons minced parsley
2 Tablespoons minced celery
2 Tablespoons minced green pepper
Dash of hot pepper sauce
1/3 cup of ketchup
Brown meat and drain. Mix other ingredients into meat. Cover and simmer about 30 minutes. Get out dough. Roll it out. Line a 10 inch pie pan with the rolled out dough. Put the meat filling in. Cover with another crust. Slash the crust to allow steam to escape. Bake in 450 degree oven for 15 minutes, then reduce heat to 350 and bake 25 to 30 minutes longer. Serve hot. Serves 6 to 8. Serve with Sangria.
Gazpacho
Ingredients: 1 ½ pounds of tomatoes, peeled and diced
1 cucumber, peeled and diced
1 green pepper, diced
1 garlic clove finely chopped
3 green onions, finely chopped
1 ½ Tablespoons of red wine vinegar
2 Tablespoons of chopped parsley
1 Tablespoon of cilantro
Salt and pepper to taste
Hot sauce to taste
1 bottle of V-8 vegetable juice.
Combine all ingredients and chill at least 2 hours. Serves 6 to 8. Add bread and cheese for a full meal.
